Healthy Fried Chicken

I don’t know about you but the winter months leave me craving comfort food and that isn’t exactly good news for my jeans. I came up with this recipe after seeing something similar either on Pinterest or in a magazine. In fact, you have probably heard of this recipe but I put a twist on it that lets you really individualize the meal based on your own needs. So let’s jump right in…

I’m sure you have heard about corn flake breaded chicken, but I’ve spiced things up a bit with recipe. The other thing that I would like to mention is that you can choose to use whatever type of corn flakes you would like. Much of the corn in the United States is currently G.M.O. corn, so for those concerned about the subject using organic corn flakes, have no fear whichever you choose will have no effect on the recipe. The other fantastic thing about this recipe is that when seasoned, the “bread crumbs” taste like well… bread crumbs!


  • 3 Cups CRUSHED corn flakes
  • 1 tbsp minced garlic
  • 2 tbsp parsley
  • 2 tbsp nutritional yeast OR parmesan cheese
  • 6 egg whites
  • 1 lb of skinless, boneless Chicken Breast
  • Coconut Oil – just enough to cover the bottom of a skillet
  • Pinch of salt


  1. Pre-heat your oven to 350* F
  2. Crush the corn flakes until you have 3 cups worth
  3. Season with garlic, parsley and nutritional yeast or cheese and set aside in a bowl
  4. Wisk together the whites of 6 eggs in a bowl and set to the side
  5. Cut the chicken into strips or nuggets and strip all fat from the meat
  6. Start dipping each piece of chicken into the egg whites then the corn flake mix
  7. Once layered with both, set aside on a dish
  8. Once all the chicken is finished, put enough coconut oil in your pan to cover evenly
  9. Place the heat on high and allow each piece of chicken to brown on each side in your skillet/pan – the Chicken will not cook through
  10. Transfer chicken directly from your skillet to a baking sheet
  11. Once all of the chicken has been browned, place the baking sheet in the oven and cook the chicken until completely cooked through – about 25 minutes
  12. Once the chicken is finished baking, immediately season with a pinch of salt


This chicken is so good that my 87 year old grandmother loved it. And let me please explain that this woman is unbelievably picky in terms of what she likes and does not like. This is a great recipe to use when “tricking” little ones into eating healthy and it’s also grown man approved, by Cooper of course!
